Cheddar it easier to cut lancashire breaks up all over the place . lancashire is nice with branston pickle on chunky bread .

I like chedder but if that is your choice then go with Cheshire it seems to go better with meat as it has a creamier texture when hot and melty

Cheshire it blends well with the meat and onions, plus it has a creamy texture so easy to crumble in.

Both nice but not the right texture,....try something like emmentaler, lerdaamer or why not gruyere.
