Walnut-Cheese Spinach Salad
INGREDIENTS
2 cups fresh raspberries
1/3 cup sugar
1/3 cup vegetable oil
2 tablespoons white wine vinegar or cider vinegar
1/4 teaspoon Worcestershire sauce
1 (6 ounce) package fresh baby spinach
1 small red onion, thinly sliced, pulled into rings
1/2 cup crumbled feta cheese
1/2 cup chopped walnuts
DIRECTIONS
In a saucepan over medium heat, bring raspberries and sugar to a boil. Cook for 1 minute. Strain and discard pulp. In a blender, combine the raspberry juice, oil, vinegar and Worcestershire sauce if desired; covered and process until smooth.
In a salad bowl, combine the spinach, onion, cheese and walnuts. Drizzle with desired amount of dressing; toss to coat. Refrigerate any remaining dressing.

Chicken Niçoise Salad
Ingredients:
12 cups loosely packed fresh spinach leaves
2 boneless, skinless chicken breasts, grilled and sliced
1/2 pound fresh whole green beans, cooked and chilled
8 small red potatoes, cooked, quartered and chilled
12 cherry tomatoes, halved
2 hard boiled eggs, sliced
2 (6 ounce) jars marinated artichoke hearts
Dressing:
1 tablespoon capers
1/4 cup Kalamata olives
2 tablespoons balsamic vinegar
1 tablespoon anchovy paste
1 tablespoon Dijon-style mustard
3 cloves garlic, minced
Drain artichoke hearts and reserve liquid. Remove pits from Kalamata olives and slice. Combine reserved artichoke liquid, sliced kalamata olives and remaining dressing ingredients in a container with a tight fitting lid. Shake well and refrigerate at least 2 hours.
Arrange 2 cups spinach leaves on 6 plates. Divide ingredients and arrange chicken, green beans, potatoes, tomatoes, sliced egg and artichoke hearts separately on top of the spinach. Drizzle with dressing and serve.
