May go bad before anyone eats the rest of them.
What can I do or make with them.

Crockpot Apple Compote

INGREDIENTS:
6 cups peeled and sliced cooking apples
6-oz. pkg. dried fruit bits
1/4 cup sugar
2 tsp. finely shredded orange peel
1 Tbsp. quick cooking tapioca
3/4 cup orange juice

PREPARATION:
Combine apples, fruit bits, sugar and orange peel in 3-4 quart crockpot. Sprinkle with tapioca and pour orange juice over all. Cover crockpot and cook on low heat for 8-10 hours until mixture is thickened and blended.

Serve immediately, alone or over ice cream, or store in glass jars in refrigerator for 2-3 days. 8 servings
Combine all ingredients in 3-4 quart crockpot. Cover and cook on high for 4-1/2 to 5 hours until thickened and fruit is tender. Store in 4 oz. glass containers in refrigerator for up to 2 weeks. 2 cups chutney - 8 four ounce containers

INGREDIENTS
4 tart green apples
1/2 cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

Apple sauce is actually quite easy to make and it makes the house smell unbelievably wonderful. Just core, peel and slice the apples. I do relatively small pieces, but it doesn't really matter, as long as they are uniform in size. Put them in a sauce pan with a squeeze of lemon and about half and inch or so of water. Add a little sugar depending on the tartness of the apples and cinnamon to taste. Cover and place over medium/low heat. Stir every 5 minutes. Once the apples have begun to break down and soften, reduce the heat to low and allow to simmer. The longer you cook it, the smoother it will be. For extra smooth sauce, an imulsion blender or food processor can be used.

Oldfashioned mashed apples
INGREDIENTS:
1 1/2 kg apples
5 dl sugar
1 dl water
juice from 2 lemons

Peel, core and cut the apples into cloves. Put them in a pot together with the sugar. Pour water and lemon juice over the apples.Bring to boil, simmer for about 20 minutes, stirring. Then mash them, whipping. Store in the freezer in suitable packages. Otherwise you will have to add some preservatives. Mashed apples goes very well with pork steaks and gravy. But there are other possibilities, cakes and buns for example.

Apple Pound Cake

1 1/2 cup oil
2 cups sugar
3 eggs
3 cups sifted flour
1 teaspoon salt
1 teaspoon soda
2 teaspoons vanilla
1 1/2 teaspoon cinnamon
3 large apples, cubed
1 cup nuts, chopped


Directions:

Combine sugar and oil and eggs at medium speed. Blend in dry ingredients. Add vanilla, 3 large apples and 1 cup of nuts. Blend well. Grease and flour tube pan. Bake at 350 degrees F for 1 hour and 20 minutes.

Cut and core an apple.Take a can of biscuits(cheap one) and wrap the biscuit around a piece of apple.Roll the biscuit wrap in brown sugar.Place the wrap in a buttered casserole dish.You can fill the dish with as many as you want.They should not touch.Then pour a room temperature Sprite or Mt. Dew over the wraps. Bake at 350 til bubbly and brown.Scoop up and put cool whip or ice cream on top.Great dish to make with apples or pears.

Dutch Apple Mini Tarts
Ingredients:
1 package (15 ounces) refrigerated pie crusts
Apple Filling

4 ounces cream cheese, softened
1/4 cup firmly packed light brown sugar
1 egg
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
3 medium Granny Smith apples, peeled, sliced and chopped (3 cups)

Topping

3 tablespoons firmly packed light brown sugar
3 tablespoons all-purpose flour
2 tablespoons butter or margarine

Directions:
1. Preheat oven to 375°F. On lightly floured surface, roll one pie crust into 12 x 10-inch rectangle using Baker's Roller™. Cut 12 circles from dough. Press into Deluxe Mini-Muffin Pan using Mini-Tart Shaper. Repeat with remaining pie crust.
2. For apple filling, whisk cream cheese in batter bowl until smooth. Whisk in sugar until fluffy. Mix in egg until well blended. Stir in flour and cinnamon until smooth. Peel and slice apples. Chop into small pieces using Food Chopper. Stir into cream cheese mixture.
3. Fill prepared muffin cups with apple mixture, filling over top of pastry. For topping, combine 3 tablespoons flour and 3 tablespoons brown sugar. Cut in butter until forms coarse crumbs. Spoon over apple filling.
4. Bake in preheated oven 18-20 minutes or until light golden brown. Let cool in pan 5 minutes. Remove from pan. Serve warm or at room temperature.

Yield: 24 servings

One thing you can do is make apple sauce, another is juice, also you can bake them, they are wonderful to make acorn squash with apple filling
