Many other foods improve with age as the flavours continue to develop.
Two that spring to mind are stews/casserole and Vegetable Soup

For the very same reason chili does. Both "ferment" although that isn't quite a good word to use because it isn't really fermentation.
Howevber, they season more. Psst...want a real treat? Take your leftover spaghetti and toss it in a frying pan with alittle oilve oil. Fry it up. If you have extra sauce (and you want to keep any addtional sauce seperate from the leftover pasta because it'll be absorbed) pour alittle on and keep frying. When good and hot/heated through, serve with some crusty bread and a rich, red wine.

The flavors have time to "marry" with the noodles. I agree with cheyenne on this one. I love to make my spaghetti the day before for dinner the next night. It is such a difference. Don't forget the salad and garlic bread. This may be weird but my husband loves it with applesauce. I tried it and it is actually not that bad!! Let me know what you think if anyone tries it.

I've noticed this. I know that homemade sauce tastes better as leftovers because it has more time for the flavors to soak in.

My guess is that it's had a chance to sit overnight and all the flavors meld into one another and soak into the pasta a little more. Esp. the garlic and onions.
I love leftover spaghetti. Moreso than freshly made. :)

The flavours have more time to introduce themselves to each other.
Experts suggest that you mix your sauce and spaghetti together for maximum flavour. It just doesn't look as nice as pasta and sauce sepparated.
And don't forget to add about 1 tablespoon of salt to your pasta water, before adding the pasta for better flavour.
Hope that helps
