Cooking a casserole which includes white whine, not looking to break the bank, so are there any great tasting substitutes?

When cooking for friends, one of whom must avoid alcohol, I have substituted white grape juice, and on another occasion I have substituted apple juice for the white wine. Depends on what the character of the recipe is.

It depend, what are you cooking?

When cooking heavier meats, such as beef and venison, choose a full red wine. Heavier Cabernets, Syrahs and Zinfandels are likely candidates.
For lighter meats, such as lamb and pork, a medium-bodied red is a good bet. Merlots, Pinot Noirs and Petite Sirahs are all good choices. These wines also pair well with tomato-sauced pastas.
Chicken and fish dishes can be overpowered by most reds. Try a Chardonnay or Sauvignon Blanc instead.
With no-meat dishes, try Chardonnays or a spicy, fruity red such as a Zinfandel. A dry white Blanc de Blanc should go very well with delicate fish and vegetarian.
Cream of mushroom, I use medium Jerez Amontillado.
Remember it doesn't have to be an expesive wine!

couple answers for you.

as a substitute for white wine you can use apple juice or chicken broth in equal amounts.

if you want a particular wine, i usually use either chardonnay or sauvignon blanc. I don't buy anything more than $8 - 10 a bottle for a large 750ml bottle. You can also buy those great mini single serve bottles from brands like Sutter Home, Woodbride, Alice White, Fetzer, etc. They are usually the perfect size for cooking as most times you only need like 1/4 to 1/2 cup.

Red wine I usually use either cabernet sauvignon or zinfandel.

first off you don't need an expensive wine to cook with. You can use vermouth or sherry in place of white wine. We buy the little el-chepo 7oz bottle/screw tops that come 4 to package at the grocery store.
