First, you get an electric skillet for the best tasting fried rice, and you add about as much rice as your cooking for, probably a few cups per person. Add soy sauce and butter before dumping rice into the skillet. (Always cook the rice before hand) When the rice start to pop or turn a light brownish color, have some frozen vegetables on hand, like stringed beans, maybe some baby corn and carrots, broccoli is good too. Add those and turn together until vegetables are cooked through.
If you like meat in it, add some fresh cooked chicken or steak, but while cooking splash with some soy sauce or tereyaki sauce and then add to the mixture. Take off of skillet and serve hot.

well this is the traditional Yang Chow fried rice which is very diffrent from the Americanized standard fried rice with roast pork in it and with the rice yellow.

Usually you have to get white rice, usually leftover white rice is the best to use. Well for me I use a wok, but if you dont have a wok a frying pan would also fo the job. I ll first list the ingredients.
If any of the ingredients bother you you can always replace with something you enjoy. The yang chow fried rice is like a jumbolia. But here the standard ingredents that my uncle uses in his restraunt.
This fried rice has no soy sauce...a delightful change..Be sure and use rice that has been cooked and thoroughly cooled.

time to make 35 min 20 min prep

1 tablespoon light sesame oil
1 tablespoon minced fresh ginger
4 garlic cloves, minced
1 small red bell pepper, finely diced
1 small red onion, finely diced
1 cup frozen peas
1 cup diced ham
1/2 lb shrimp, peeled deveined (16-20 count)
3 eggs, beaten and scrambled in large curds
4 cups cooked jasmine rice
2 scallions, white and green parts, thinly sliced
1 teaspoon Chinese five spice powder
1 teaspoon kosher salt
2-4 teaspoons dried red chilies or szechuan peppercorns
1/2 teaspoon cracked black pepper

1. Place a wok or large skillet over medium-high heat and when it is hot, add the oil.
2. Add the ginger and garlic and cook until lightly carmelized, about 1 minute.
3. Add the bell pepper, and red onion and cook for 2 minutes.
4. At this point, I add the frozen peans, ham and shrimp and cook, stirring constantly -- for a couple of minutes.
5. Then I add the eggs and rice and keep moving ingredients around.I never leave the rice stick to the sides of the pan.
6. Then you can add the scallions, spices, salt and pepper, continuing to stir until heated completely 4-6 minutes.
7. Serve immediately.

Depending on the type of fried rice you're you're making the ingredients will vary. For the type found in most places here in Hawaii basically you'll need...
Approx. 1 - 1 1/2 cup cooked white rice per person
Minced garlic
Thinly sliced scallions or green onions
Frozen peas & carrots (or any other colorful frozen veggies)
Sliced meat/protein of some sort (beef, pork, poultry, shellfish)
Sesame seed oil
Oyster sauce

In a wok or appropriate sized frying pan heat sesame oil and garlic on med-high making sure not to burn the garlic. Add rice and break up "chunks". Heat till rice is warmed through.
Add meat and frozen veggies and heat for about 2 - 4 minutes then add oyster sauce and mix/toss thoroughly and heat till mixture is hot. Serve on plates garnish with green onions. Another ingredient you can add if you have access to it is "Kamabuko". It is a fishcake that's pink in color and shaped in a half cylinder. It should be available in the from Asian markets in their chill cases.

Here is a basic recipe for fried rice that you can adapt depending on what vegetables you have on hand:

Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine

Directions:

Break rice apart with wet hands
Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.

May be prepared in advance. May be frozen. Reheat before serving.

Start with rice that has been cooked & cooled. Hot rice will sizzle in the pan in an unpleasant way.

To get fried rice similar to what you get from restaurants in the mall, throw some frozen mixed veggies and the rice into a frying pan of hot oil (not a lot). Add terriaki or soy sauce to beaten egg and add that to the pan -- stir well to coat.

Procedure:Soak rice for 1 hour.Add 2 tsp. of ghee with jeera in a vessel.Add chopped onions to the vessel and mix it until the mixure becomes brown.Add carrots and beans in the vessel after the mixture in the vessel becomes brown.Add water and salt to taste.Let the water boil and add the soaked rice.Let it be cooked for 20 minutes.And the delicious fried rice is ready.

FRIED RICE

4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 tablespoons dried mushrooms
2 dried whole eggs, rehydrated
1 tablespoon soy sauce
shredded canned ham, pork or chopped shrimp (optional)

Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions and mushrooms and meat, if using. Cook for several minutes. Combine rehydrated eggs with soy sauce and stir into pan. Cook until eggs set.
