A question about my new favorite drink...I like this :-)
Last Christmas season I was fortunate enough to be invited to an Irish pub that has been in business for 100 years in the same location. My brother in-law that invited me, has been good friends with the owners for years so I was treated to a wonderful time. Anyway, back to the Irish Coffee...
In a coffee mug (about 2 cups in size) place a tablespoon of brown sugar in the bottom.
Add an ounce (1 shot) of whiskey. Preferably a nice Irish whiskey, for one they're good, for two it's appropriate for St. Patty's Day but any whiskey will work in a pinch.
Fill the mug with hot coffee.
Now for the finish, you can just get this part done or you can really impress your guests. Float a dollop of whipped cream on top of the coffee. If you want to take the easy way out you can use any pre-made whipped cream. If you really want to impress your guests...and make a better tasting drink...get a carton of Heavy Whipping Cream from the grocery store. Just before topping the drink, whip the cream yourself!
Lots of guests? Whip a little cream just for the first round and then have some done ahead of time that you can scoop on for the rest of the evening.

Bailey's Irish Cream and similar are nasty and not used for "real" Irish coffee. If that's what you're used to, then go for it.
Brew a good coffee - it's worth it for the occasion to get a premium brew. Pour a cup. Stir in a teaspoon or two of sugar. Add a shot of a good Irish whiskey, like Jameson or Bushmills. At this point, either add a few tablespoons of light-to-medium cream or squirt on some whipped cream.
An Irish coffee in its most basic form is just an American-style coffee-sugar-cream with an added shot of whiskey. Serve piping hot.

You need Irish whiskey for a true Irish Coffee.
1 cup freshly brewed hot coffee
1 tablespoon brown sugar
1 jigger Irish whiskey (1 1/2 ounces or 3 tablespoons)
Heavy cream, slightly whipped
Fill footed mug or a mug with hot water to preheat it, then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved. Blend in Irish whiskey. Top with a collar of the whipped heavy cream by pouring gently over back of spoon. Serve hot.

Homemade Irish Cream
INGREDIENTS
* 1 (14 ounce) can sweetened condensed milk
* 1/4 cup liquid non-dairy creamer
* 3 eggs
* 1 drop vanilla extract
* 1 1/2 tablespoons chocolate syrup
* 1 cup whiskey
DIRECTIONS
1. Pour all ingredients into a blender and blend on high until mixed. Pour into a sealable container and store in the refrigerator. Serve in shot glasses.
Pour a cup of coffee and add a shot of the above into the coffee...YUM

My guests always rave about my coffee with Baileys Irish cream mixed in, then topped off with whipped cream. Yummy!!

For those who don't drink, here is a booze free version you can make every day, even add it to hot chocolate, latte, smoothies,,,,,, there are syrups in the coffee section of the grocery stores, near the roasted coffees, (By the way, most stores carry the flavored beans too). They are great flavors, because they come in sugar free too, just in case someone is dieting or diabetic. Not expensive at all.

Make a coffee, cover it with whipped cream and pour some baileys over it. It is soooooo good.

yeah, make coffee.. and put irish cream in it ( i mean the real deal : BAILEY's) liquor sooo goood!
