I think its the same as convection. the fan circulate air so the outside cooks faster. It makes the skin crispier.

I've got one, its magic, cooked a goose that was stuffed with five other birds , duck chicken partridge pheasant and wood pigeon all boned out. It cooked in three hours and was wonderful

They turn the food as it cooks. Presumably you get a better degree of cooking.
