Actually, I just did a quick online topigal guide search on "Eagle" in the Bible, and I found all of this:

Ex. 19: 4 I bare you on eagles wings.
Deut. 28: 49 Lord shall bring a nation against thee . . . swift as the eagle flieth.
Deut. 32: 11 as an eagle stirreth up her nest.
2 Sam. 1: 23 Saul and Jonathan . . . were swifter than eagles.
Ps. 103: 5 thy youth is renewed like the eagles’s.
Isa. 40: 31 they shall mount up with wings as eagles.
Jer. 48: 40 he shall fly as an eagle.

No it's the king of birds really. It would be much worse if the men who ran this country thought the turkey was a better choice. I think Benjerman Franklen looks like a turkey and thats why he wanted it to be the national bird.

Oh my goodness...don't be rediculous. Should we pick another animal as the king of the jungle b/c the lion is mentioned in the bible? Should we hate children b/c they are mentioned alot in the bible? Should we get rid of all the rivers b/c they are mentioned in the bible? I can go on and on and on

No, that would be out of the question. Water, trees, women, & children are in the bible to...that doesn't mean The Department of Children & Families or the Wildlife Reserve shouldn't symbolize them.
