GRANOLA CLUSTERS
6 cups uncooked oats
1 cup shredded, sweetened coconut
1/4 cup whole wheat flour
1/4 cup wheat germ
1/2 cup powdered milk
2 Tbsp cinnamon
1 tsp powdered ginger
1 tsp cardamom
3/4 tsp. salt
2/3 cup light olive oil
3/4 cup dark corn syrup
1/4 cup honey
1/4 cup packed dark brown sugar
2 Tbsp. vanilla extract
1 Tbsp. coconut flavoring
1 tsp almond extract
1 Tbsp. walnut flavoring
1 Tbsp. maple extract
1 tsp orange extract
1. Preheat oven to 300. Cover a large baking sheet (13×9) with a silpat, generous coat of oil, or parchment paper.
2. In a large bowl, combine oats through salt and mix.
3. In a saucepan heat oil, honey and corn syrup until just warm. Alternately, heat this mixure in microwave-proof bowl for 1-2 minutes in the microwave, until warm. Mix flavorings and extracts into honey mixture.
4. Pour honey mixture over oat mixture and stir well. Spread on prepared cookie sheet and bake for 45-50 minutes, stirring every 20 minutes or so. When you remove from the oven, “tamp down” the granola into a compact layer. This makes the formation of granola clusters easier. Let cool, break large clumps into pieces, and store in an airtight container or sturdy zip-lock bags.
