I believe your brain is removed and kept for medical students specializing in neuro-science. all the rest is sent to cadaver labs. usually for one year at which time the parts are shipped back to the instiutution and cremated

Some are used promptly for studying techniques. Your body may be kept over a year (until the next medical school class starts and finishes anatomy). Some parts may be stored longer as part of a museum. I would suggest you contact a local medical school (preferably the one you would most like to assist) and discuss this matter.
