Most of the production of olives takes place in the Mediterranean Basin. It is believed that the olive was first used by the Minoans of Crete about 3500 BC. The olives take 6 to 8 months to mature on the tree.

Kalamata olives come from Greece. It is an almond-shaped olive (also spelled calamata) that ranges in length from about 1⁄2 to 1 inch. Kalamatas are a dark eggplant color and have a flavor that can be rich and fruity. They're often slit to allow the wine vinegar marinade in which they're soaked to penetrate the flesh. Kalamatas are marketed packed in either olive oil or vinegar.

You would need to live in a very warm to hot climate to grow an olive tree. If you want a quick source, you can get them already cured in Mediterranean markets or sometimes at larger supermarkets where they sell pickles, relish and other jarred condiments. They may also be sold loose at the deli counter.
