heat your oven to 425 f. rub the chicken with a mix of salt, pepper, poultry seasoning, chopped garlic and olive oil. place in a light colored or glass baking dish and roast in the oven for 30 - 40 minutes. check with an instant read thermometer after 30 minutes - if the thickest part of the largest breast reaches 170 f, then remove them both from the oven, cover in foil and let rest for at least 5 - 10 minutes before serving.

Hello! If you have a glass baking dish, you could take the chicken and put herbs and spices on them with a little water in the pan and put it in the oven around the 350 degree mark and cook for 30 minutes or so. You could turn it over halfway and cook the other side. OH yes... do cover it with aluminum foil to keep the skin from drying out and all. You could do it in a toaster oven if your dish will fit. You could try that... or maybe try to cut out the bone and fix it another way! A quick and easy recipe I came up with was to fix the strips of chicken in a saute pan with oninons and peppers. When it's closer to being done, but a little bit of taco seasoning and salsa in it to make a nice fix. You could also put a little bit of cheese to fix it even nicer. Hope this helps.

Put them in an ovenproof dish. Put salt and pepper on them. Bake at 400 for 1/2 hour. Chop a medium onion and bake with the chicken about 15 minutes. Add 1 cup rice, 1/2 tsp. salt and 2 cups water or chicken stock. Cover and bake about 3/4 hour or maybe 1 hour (you'll have to check the rice to see if it's cooked). this is a favourite of mine.

Yellow Chicken
INGREDIENTS
2 tablespoons olive oil
1 teaspoon Worcestershire sauce
1 teaspoon ground turmeric
1 teaspoon dry mustard powder
1 clove garlic, minced
4 skinless, bone-in chicken breast halves
4 slices bacon, cut in half
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a bowl, mix the olive oil, Worcestershire sauce, turmeric, mustard, and garlic.
Arrange the chicken breast halves in a medium baking dish, and top each with 2 halves bacon. Brush with the glaze.
Cover, and bake 45 minutes in the preheated oven. Remove cover, and continue baking 15 minutes, or until chicken juices run clear.
Pepper Jelly Glazed Chicken
INGREDIENTS
4 bone-in chicken breast halves, with skin
1/3 cup red pepper jelly
1/3 cup Dijon mustard
1/3 cup honey
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees F).
Arrange chicken breasts in a baking dish so they are not crowded. In a cup or small bowl, mix together the pepper jelly, mustard and honey; pour over chicken to coat.
Bake uncovered for about 1 hour, basting occasionally, until chicken is no longer pink, and the juices run clear.
Outstanding Chicken Dinner
INGREDIENTS
2 tablespoons unsalted butter
1 (8 ounce) package button mushrooms, chopped
2 cups chicken broth
4 bone-in chicken breast halves, skinless
1 (10 ounce) can artichoke hearts, drained and sliced
1/2 cup unsalted butter
1/2 cup all-purpose flour
1 1/2 cups half-and-half cream
1 cup grated Parmesan cheese
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Melt 2 tablespoons of butter in a large skillet over medium heat. Saute mushrooms in butter until tender. Remove from the skillet, and set aside.
Place the chicken into the skillet, and pour the broth over it. Cover, and simmer over medium heat for 20 minutes, or until the chicken is cooked through. Reserve 1/2 cup of broth from the pan, and discard or save remaining broth for other uses. Remove the chicken to a 9x13 inch baking dish, and top with artichokes.
Melt the remaining 1/2 cup of butter in a skillet over medium heat, and whisk in flour until smooth. Gradually stir in the 1/2 cup of reserved broth, and half and half cream. Cook, stirring constantly, until thickened, about 5 minutes. Turn off the heat, and stir in the Parmesan cheese, rosemary, salt and pepper. Pour sauce over the chicken in the baking dish. Place sauteed mushrooms on the top.
Bake uncovered for 30 minutes in the preheated oven. Let stand for a few minutes before serving to let the sauce thicken.
ENJOY!
