Try my version of a ratatoullie. Slice zucchini about 1 cm thick sprinkle salt on the slices and set aside for 10 mins. Do the same to an eggplant. Slice 2 beefsteak tomatoes about 1cm thick, slice an onion, cut up 250gm mushrooms and get some sliced lightly smoked ham and grated mozzarella cheese and some minced garlic. Panfry the eggplant in a little oil and lay the pieces n a baking dish, then follow the same with the zucchini on the eggplant. Then lay the ham over the eggplant and zucchini. Panfry the onion,garlic and mushroom and layer it over the ham. Add another layer of zucchini. Then fry up the tomato and put on top, sprinkle with bread crumbs and mozzarella cheese and grill until cheese is melted, cut and serve accompanying either steak or grilled chicken.

zucchini bread is always good.. use a banana bread recipe but sub shredded zucchini for the banana.. also you can fry it like okra. mix 1 cup cornmeal with a 1/2 cup of flour. add salt and pepper and maybe a little garlic powder. cut zucchini into 1/2 in thick pieces, dip the pieces in egg, and roll in the cornmeal mixture. preheat a skillet with oil or butter and fry zucchini till brown on both sides.
you could also saute' zucchini and onion together in a little butter as a side dish. season with salt and pepper.

Chicken with zucchini and garlic cream sauce
INGREDIENTS:
1/4 cup butter
3 whole chicken breasts, halved
3 cups zucchini, sliced 1/8-inch thick
1/2 cup diced green onions
Garlic Cream
2 tablespoons butter
1 large clove garlic, minced
3 tablespoons flour
1 (3 oz) package of cream cheese
1 can chicken broth
1/2 tsp. pepper
PREPARATION:
Chicken:
In skillet, melt 1/4 cup butter; add chicken breasts. Cook, turning once, until chicken is browned and fork tender. Add zucchini and onions. Continue cooking, stirring until zucchini is crisp-tender.
Garlic Cream Sauce:
In 2 quart saucepan, melt 2 tablespoons butter; add garlic.

Cook for 1 minute, then stir in flour and cook until smooth and bubbly. Add remaining ingredients and continue cooking, stirring occasionally, until sauce is smooth and thickened.
This is pretty served on a bed of rice - layer the zucchini and then the chicken breasts on top then pour sauce over each chicken breast! =] enjoy

My husband loves zucchini (he grows it in his garden). Here are two of his favorites.
Side dish
2 cloves garlic
2 teaspoons olive oil
4 cups zucchini, sliced (about 4 small zucchini)
1 teaspoon dried mint, crushed (if you have fresh – great, but use about 1 tablespoon)
1/4 teaspoon salt
Dash black pepper
2 tablespoons finely shredded Romano or Parmesan cheese
In a large skillet cook whole garlic cloves in hot oil until lightly brown; discard garlic.
Add zucchini; dried mint (if using), salt, and pepper to oil in skillet. Cook, uncovered, over medium heat about 5 minutes or until zucchini is crisp-tender, stirring occasionally.
To serve, sprinkle with cheese and fresh mint (if using).
Main dish
4 large zucchini
1 1/2 cups chopped cooked chicken or turkey
1/2 cup chopped cooked vegetables (such as sweet peppers, eggplant, and/or zucchini)
1/2 cup chopped tomato
1/2 cup finely shredded Parmesan cheese
1/2 teaspoon Mediterranean seasoning or other herb seasoning blend
In a Dutch oven or large saucepan cook whole zucchini in boiling, lightly salted water for 5 minutes; drain and cool slightly. Cut a lengthwise slice from the top of each zucchini. Using a spoon, carefully scoop out pulp, leaving about 1/4-inch shells.
For filling, in a medium bowl stir together the cooked chicken, vegetables, tomato, half of the cheese, and the seasoning. Spoon filling into zucchini shells. Place in a shallow baking pan. Sprinkle with the remaining cheese.
Bake in a 400 degree F oven for 10 to 15 minutes or until heated through.

Salt the slices of zucchini and press between paper towels for several minutes to get the extra moisture out. Brush with oil, sprinkle with pepper and other seasonings, and grill for a few minutes.

I use a slicer with a blade that has ripples, turn the zucchini 90 degrees each slice and it makes little waffles. Soak the slices in a beaten egg with 1/2 water, flour and fry. Serve in flour tortillas with feta and lettuce, maybe some mushrooms.

My favorite thing to do with zucchini is to fry it in a little olive oil until just tender.... add some seasoned salt and then..... scrambled eggs with it. Slice a tomato on the side with a piece of toast and a glass of milk... Makes a great breakfast or snack.

make your meat sauce or your red sauce (tastes good either way) shredded your cheeses fry your zucchini in a little oil just to brown sides after you have cut them in 1"to 2" thick round circles lay a layer of zucchini -layer of sauce -layer of cheese repeat until baking dish (spray dish with baking spray for easy clean up) bake at 350 for about 45 minutes serve with garlic bread and a salad enjoy

slice zukes on slicer
(BUT SLICE AROUND SETTING 2 MAYBE 3)
lay flat in container sprinkle salt
(THE SALT WILL REMOVE EXTRA MOISTURE NOT NEEDED)
stick in refer for about two hours
while zukes are chilling and the salt is working hard maybe you should relax and maybe have a martini or a cocktail
yes beer is a cocktail if drunk from a glass
remove zukes from refer place on table and make one more cocktail.
time to mulitaks
while having cocktail bring out AP flour(ALL PURPOSE) and put some in a container
YOU MAY WANT TO SEASON FLOUR IF YOU WISH
get pot or fry daddy or what ever kind of deep fryer that you have and get it ready
is your cocktail ok?
crack some eggs in a container add some water
better make a new cocktail
might want to call a mate up and tell them to come over
