I don't like kidney beans in my chilli. I fry mince with onions and red peppers. Boil for ten mins. Add some gravy or thickener and lots of chilli powder. simmer for five mins and then add a small tin of baked beans! yummy hope you enjoy!

First of all, Chili Con Carne does not use mince, it uses stewing beef. If you use mince it is just chili. The stewing beef should be dusted with seasoned (salt, pepper, chili powder) flour and browned off before anything else is done and then follow any of the above generic recipes.
Here's the real trick, and I am not kidding either, you must try it.
Whatever recipe you use add a little bit of 70-80% chocolate about halfway through the cooking after there is a bit of liquid in it. People forget that chocolate is from Mexico and used to be a savoury flavour. It adds an earthyness to the dish and really kicks it up a few notches.
This has been my secret for years and it has only been revealed to my wife before this.
Don't laugh, it works.
Also, don't use water, use a bottle of beer for the same volume. This is an old chili contest trick.
And after all is said and done, keep tasting it and change according to your taste.

Minced beef, Onion, chopped tomato's (tinned), hot chilli powder, kidney beans and peppers if you like. I like my chilli so it bites back a little, so add chilli powder to taste. I normally use 1 very level teaspoon. Also if you have the time, cook it let it go cold and them reheat it. It has a bit more kick that way!
I cook mine in a large frying pan, onions first, then add meat. When cooked drain off all excess fat, put back in pan, add tomato's peppers if you want them and chilli powder. simmer for about 15-20 mins and add beans. Simmer for same again, than take off heat and either cool and reheat or serve. Yummy!

2 tbsp olive oil
2 large onions, halved and sliced
3 large garlic cloves, chopped
2 tbsp mild chilli powder
2 tsp ground cumin
2 tsp dried oregano
1kg pack lean minced beef
400g can chopped tomatoes
2 beef stock cubes (we like Just Bouillon)
2 large red peppers, deseeded and cut into chunks
10 sundried tomatoes
3 x 400g cans red kidney beans, drained
Heat oven to 150C/fan 130C/gas 3. Heat the oil, preferably in a large flameproof casserole, and fry the onions for 8 mins. Add the garlic, spices and oregano and cook for 1 min, then gradually add the mince, stirring well until browned. Stir in the tomatoes, add half a can of water, then crumble in the stock and season.
Cover and cook in the oven for 30 mins. Stir in the peppers and sundried tomatoes, then cook for 30 mins more until the peppers are tender. Stir in the beans.
To serve: Reheat on the hob until bubbling. Serve with avocado or a big salad with avocado in it, some basmati rice or tortilla chips and a bowl of soured cream.

1) get a microwave bag'o'rice
nuke it
2) get a tin of chilli con carne
heat it
3) put rice on plate
4) top with chilli con carne
5) garnish as required

INGREDIENTS
5 tablespoons vegetable oil
2 large onions, chopped
1 chile pepper, chopped
5 cloves garlic, chopped
2 pounds lean ground beef
3 (14.5 ounce) cans whole peeled tomatoes with liquid, chopped
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 1/2 tablespoons ground cumin
1/2 tablespoon chili powder
2 tablespoons paprika
2 tablespoons dried oregano
2 cinnamon sticks
6 whole cloves
2 (15.25 ounce) cans red kidney beans, rinsed and drained
DIRECTIONS
In a medium sized stock pot, heat the oil over medium heat. Saute onion, chile pepper and garlic until soft. Add ground beef: cook and stir until meat is browned.
Pour in tomatoes with liquid, salt, pepper, cumin, chili powder, paprika, oregano, cinnamon sticks, and cloves. Cover and simmer for 45 minutes.
Stir in kidney beans, and cook another 15 minutes. Remove cinnamon sticks before serving.

if you add a little bit of coffee powder it makes a tomato sauce quite nice- i saw it on ready steady cook and tried it
