Whats the best way to soak up excess grease on a griddle while cooking?

And without using a paper towel and getting burned. Do they make a specialized gadget for this?

How about bread cubes,then just get rid of them after you are threw,

i use papertowels and tongs, or i a device that is round metal mesh (like a sflat strainer) that goes over the frying pan then drain the grease in a can or sink.

Beer is great for cleaning BBQ plates by the way.
