I dont think you'll be hurting very much, but it's a very boring diet, so I doubt you'll stick to it for very long. why not eat lean sources of protein with some vegetables. I don't think you can totally avoid fat altogether.
Very little foods contain no fat and no carbs. Even the best and healthiest foods have some fat or some carbs in them, like fish, broccoli, blue berries, chicken, peppers, tomatoes, etc.
It's a good idea that you are avoiding refined sugar. But some sugar in the form of fruit is ok in moderation.

Your fear of eating carbohydrate is unfounded. Any food can lead to fat gain, whether carbohydrates or proteins. If you consume too many calories, it doesn't matter if those calories came from a protein shake or oatmeal or junk food, it can turn to excess fat.
Eating pure protein is a bad idea. Your body requires all of the macronutrients - protein, carbohydrates, fats, water, etc. You also require plenty of nutrients such as vitamins and minerals. The only way to receive the fullest spectrum of these nutrients is by eating a variety of foods and food types.
Why are you avoiding sugar? I know it's a popular trend to say sugar is bad. But here is a surprise for you: your vegetables also contain sugar! And your proteins can turn into sugar.
All sugar eventually ends up in the bloodstream as glucose, regardless of whether it comes from a candy bar or a vegetable. The difference between foods is what comes WITH the sugar (i.e. vegetables and fruits will supply fiber, vitamins, minerals, and other nutrients) and how long it takes for the sugar to enter the bloodstream.
The time it takes for sugar to enter the bloodstream can be measured by a scale known as the "glycemic index."

Your protein sources look good but you are making another mistake by going fat free. Having lean or low fat proteins is fine, but fat is essential to your nutrition as well. You must learn to look for healthy fats, such as the yolks of eggs from grain fed or free range chickens, from cold water fish, from flaxseed and other oils, etc.

The bottom line is even eating protein can make you fat. Avoiding healthy foods like fruits and whole grains and healthy fats can absolutely harm you. There is a large body of research the indicates these foods provide nutrients that help protect against stroke, congestive heart failure, and other degenerative diseases, and by eating an imbalanced diet that eliminates these food groups, you are increasing your risk.

You should be eating carbs. Avoid refined sugar but you should be eating whole grains and fruit. By the way, most vegetables do not have any appreciable amount of carbs. You also need a little fat in your diet but you do want to limit the amount of fat you eat. You will be hurting yourself if you continue to eat that way.

Whole grains are good for you. Haven't you learned the difference between good and bad carbs? I suggest you do that.
A balanced diet is essential for overall health. Balanced means protein, carbs and limited monsaturated or unsaturated fats.
You gain weight when you eat more calories than you use. Period. Those calories can come from anything.
Too much protein is hard on your kidneys-especially animal protein.
You might want to examine your obsession with your weight and diet.

Having sufficient fat in your body is necessary for you body to function properly. Body builders sometimes go on low fat diets to shape up for competition but it's not a good idea to put your body through this for too long. The walls of the cells in your body are made up of mainly fat and some protein. Everything entering and leaving each cell has to negotiate a path through this cell wall. It is very important that you eat and absorb fats to do this important work. A source of these fats is nuts and seeds. Carbohydrate is important in making these fats available to your body so the amount of carbohydrate you eat will influence how much fat you can deposit in your body. Carbohydrate, however has another important function it provides energy for not just your body but also for your brain to work. Protein is only needed in relatively small amounts. The recommendations for the dietary intake of protein made by the authorities are about double what your body requires and taking in excess of what is recommended causes all sorts of problems. Aside from vitamins best obtained in a variety of foods minerals are also very important.
Your diet has some problems with some unnecessary exclusions and inclusions.
YOUR DO NOT WANT TO EAT LIST
FRUIT has a special sugar in it called fructose which has a different metabolic pathway to glucose which takes longer and doesn't cause some of the problems that glucose causes. You find lots of glucose in grapes and grapes were not recommended for Samson, a strong man in the Bible. Bananas are starchy or sugary depending on how ripe they are and don't really seem to fit with most other fruits which have a large water content.
DAIRY depending on how much you eat and what else you're eating can be a useful food.
CARBOHYDRATE or starch in food is made up of long chains of glucose and as your body breaks up these chains the glucose becomes available to you gradually, particularly in less refined carbohydrates such as whole grains. If your body has insufficient energy available it will go into surtvival mode. Your muscles will waste away as your body canabalises itself to provide the fuel it needs to keep functioning. You will grow extra hair on your skin as your body tries to keep warm without the heat from energy coming from within. Your stamina will decrease as you have no reserves of sugar (glycogen) in your body. Vegetables (and fruits) don't really have a lot of carbohydrate in them which is a problem as your body needs sugar or energy.
There are NATURAL SUGARS in vegetables particularly carrots, sweet potato and pumpkin.
Nuts and seeds (as well other foods e.g avocadoes and artichokes) provide oils that are not easily available from other sources. You can eat the whole food rather than oils that have been extracted from them, so your not having too much. Think of eating good oils as an inner beauty treatment that will show on the inside and the outside. (Peanuts are legumes not nuts)
YOUR WILL EAT LIST
There are other meats besides CHICKEN you can eat fat free. You may miss out on sufficient iron and vitamin B12 depending what's in the rest of your diet.
VEGETABLES don't have sufficient energy in them to sustain your body unless perhaps you fill up on the starchy ones such as potatoes.
Too many EGG WHITES may give you vitamin B17 (biotin) deficiency.
WHEY comes from milk. It is better to obtain your nutrients from a variety of sources.

you need to eat fruits because that is good, natural carbs and you have to have some fat to keep your body in line sugar is good for you too. it keeps your body from producing too much insulin and you could become diabetic.
