You can season them with salt, pepper, garlic, paprika and olive oil & bake in 350 oven til done. OR...
When they're just about done, you can top them with some sauce, mozzarella or parmesan cheese and just a litte oregano & put them back into the oven until the cheese melts

Why not try what I'm doing for dinner tonight. It's easy, low in fat and counts towards one of your five-a-day.

Heat some sunflower oil in a large pan over a medium heat. Season the chicken on both sides, then fry for about 5/6 minutes until almost cooked through (if you have skinned chicken, keep it on. This will give the chicken great flavour and stops the chicken drying out during cooking. You can always remove the skin before eating for a healthier option. cook skin side down first). Turn over and cookfor another 3 mins. Take out the pan and keep warm.

Drain approx 200gm baby beetroot (buy in jar with vinegar), reserving the vinegar, and cut into wedges.

Add 2 tbsp of clear honey to the pan, along with 2 tbsp of the vinegar, then reduce until you have a syrupy glaze. Add the beets and any juices that will have come from the chicken, toss for a few minutes until hot through.

Divide approx 50gm of watercress onto two plates, then top with the beetroot and the chicken. Spoon the syrupy sauce over to serve.

Chicken Breast Supreme
INGREDIENTS
1 1/2 cups Plain yogurt or sour cream
1/4 cup lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon celery seed
1/2 teaspoon Hungarian sweet paprika
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
8 skinless, boneless chicken breast halves
2 cups fine dry bread crumbs
DIRECTIONS
In a large bowl, combine first eight ingredients. Place chicken in mixture and turn to coat. Cover and marinate overnight in the refrigerator. Remove chicken from marinade; coat each piece with crumbs. Arrange on a shallow baking pan. Bake, uncovered, at 350° for 45 minutes or until juices run clear.
I used regular paprika, I couldn't find the Hungarian kind.
** I didn't marinate mine overnight, just about 3-4 hours and it turned out great, just poke some holes in the chicken to the sauce gets inside a little.

pound up and mix a clove of garlic, thyme, salt, pepper and butter in a pestle and mortar.
push the mixture under the skin of the chicken.
roast in a medium hot oven until cooked through.

goes well with pasta in tomato sauce.

Try frying them gently in butter and freshly squeezed lemon juice. If you're anything like me, you'll never want to eat chicken any other way after trying it.

flatten the chicken breasts....fill with some garlic & herb philladelpia...then wrap with either bacon or parma ham..bake in oven for 20-30 mins...serve with new pots & veggies...lovely

well it depends what else you have in your cupboards...assuming you have the essentials,what about grilled chicken,chips and veg
