Can I describe something as irrational

ie: Drinking made him quite irrational.

or is it more correct to say 'drinking made him behave irrational'?

Irrational is a state of mind so drinking would have made him quite irrational. He may have behaved irrationally or erratically (adverbs referring to behavior).

Drinking made his behaviour irrational
His urge to drink so much is irrational

Drinking made him quite irrational. OK

you say "drinking made him behave irrationaLLY", because it's an adverb.
