Go to the store/place where you usually buy your meats (or any clean store where meat is sold) and if they don't normally have beef hearts on stock, ask to talk to the butcher there.
Ask if he/she will save you a beef heart. Many people do this and most butcher's are happy to help them. They will put the heart in a container, set it aside for you and either tell you when to come pick it up, or call you on the phone when it becomes available.
You can do this for other hard to find cuts or types of meat too.

go to wherever you usually buy your meat and ask them if they can order a heart for you, or if you have a butcher shop in town go to them

I have seen it in the larger Asian markets in the DC area, you might want to call one where you are.
