Go to the store/place where you usually buy your meats (or any clean store where meat is sold) and if they don't normally have beef hearts on stock, ask to talk to the butcher there.
Ask if he/she will save you a beef heart. Many people do this and most butcher's are happy to help them. They will put the heart in a container, set it aside for you and either tell you when to come pick it up, or call you on the phone when it becomes available.
You can do this for other hard to find cuts or types of meat too.
