What I do is cut off all the spikey tips, then shear the bottom to eliminate the long stem so you can stand them in about an inch and a half of water in a pot that you set to boil at low heat and add some lemon juice to the water. Once the water is hot enough to let off steam cover and let cook for about 20 to 40 minutes. Then remove and allow to cool. I eat them by plucking a leaf at a time and dipping the end into a vinaigrette. You just eat off the very end and continue to do so until the artichoke is reduced to a pointy cone. Then you need to separate the heart. You slightly pinch the cone at the base and separate it from the base. You will find some kind of hairs that you need to get completely rid of. What remains is the heart of the artichoke, I rinse it prior to eating to get rid of any stray hair and then eat the heart with vinaigrette.

you can also eat them raw (very thinly sliced) in salads. But you need to place your artichoke hearts in a bowl full of water and the juice of at least 2-3 lemons: leave them soaked for a couple of hours so that they'll loose their bitterness. You need to do this before cooking them anyway. The result will be a very sweet veg which you can add to frittatas , use as a base for a pasta sauce. You can also chop them into quarters, place them in a nice batter and deepfry them (serve as appetizer).

It seems a bit of a waste, but you cut away all the outer hard leaves till you get to the inner whiter section...Then you boil them until tender.......A better way is to buy Artichoke hearts in a tin....Its as cheap and no messing around....From the tin you can do what you like with them.....

Best way is to steam it whole. It takes about 40 minutes. It's easier to eat if you use some kitchen shears (before you cook) to cut off the tips of each leaf that has the spike part on it. It also makes it look better.
Another way is to go through the top and take out the stuff you can't eat, and then stuff with something (bread and shrimp, etc), Then steam it.

yes the ones with the spicky leaves
you need to take of all the leaves with a sharp knife as these will taste rubbery,
you only need the light colour heart, where it looks a bit stringy..
boil in salt water ( you can do this hours before needed )
you can take the center out and mix with something else you like and put it back in, drizzle with olive oil and seasoning and put in the oven for half an hour

They're called 'globe artichokes' and they're very easy to grow if you have a garden!
Pull off just the toughest outer leaves, leave them on and steam it whole fora bout 20 mins. Pull off the green leaves and dip the bulbous base in melted butter, the eat that by scraping it off the leaf. Eat the heart when you get to it after pulling off all the leaves.
