Mythbusters did, there are chemicals in the mints and the soda that react, but the main reason is that the mint has tons of tiny dimples on it which expands the surface area to quicken the release of the CO2 in the pop.

Myth busters just had a whole show about this! Turns out it is true, it has to do with the chemical coating on the mento reacting with the chemicals in the soda. It's fun, try it!

Myth Busters (discovery channel) did a whole show on the phenomenon of putting mentos in diet soda...it was really fun to watch. I can't find it on mythbusers site (boo hoo) but you can watch it happen on the link below
