Yes, but you need a few sunny, low humidity days and the right kind of tomato to truly sun dry them (I cheat and use a $3 dehydrator I bought at a yard sale). Get meaty tomatoes like plum or Roma to make thick, rubbery dried ones. Cut the stem end out, cut in half and scoop out the seeds. Place cut side up on a clean window screen set on a couple of chairs or sawhorses out in the sun. The idea is to make sure the area under the tomatoes is open to air. It will take a few days and you'll have to bring them in at night. Once rubbery, put in a jar, cover with olive oil and store in fridge to prevent botulism. My favorite is to slice cherry tomatoes in half and wipe out seeds, dry in dehydrator until very dry and crisp, can be stored in jars in cabinet (no oil) and eat like candy - yum.

Tomatoes (from 10 to 1000!)
Salt (coarse is better)
Vinegar
Olive Oil
Assorted herbs, optional
Instructions:
Preheat oven to 300 degrees. Half or Quarter the tomatoes depending on size. Place them cut side up on baking sheets and salt them down. The salt is used mainly to expedite the drying process. Bake at 300 for four to eight hours--until 'maters are dried. Dip in vinegar, and pack in sterilized jars with Olive Oil. Add herbs if you wish (Oregano seems an
obvious first choice, but others would be interesting). Refrigerate. Keeps for many many months. USES: In cold salads, tossed in pasta (hmmm...like a creme sauce with slivers of dried tomatoes...I'm getting hungry...), in omlettes, etc. etc.
