If you mean putting the mashed potato inside the pepper, then probably not. Might be good on the side....I usually put rice or couscous inside the pepper. Good idea though, think I'll make that for dinner tonight!
Who keeps giving thumbs down to anyone who thinks potatoes and peppers might not mix? The question says "would it work?" I personally don't think so! Just my opinion!

OK, we blanch the peppers and then brown a lb of ground beef, then we add Spanish rice to it. We stuff the peppers and bake for 1/2 hr then about 5 minutes before it's done we top the peppers with slices of American cheese.
It's one of my favorites, and it's easy to make. I think I would prefer the rice over the potatoes.

Serves: 6 Servings
Ingredients:
6 lg Bell peppers
3/4 lb Lean ground beef
3/4 lb Ground pork -- * see note
1 Onion -- chopped
4 Potatoes -- cooked, diced
2 ts Angostura bitters
2 c Cheddar cheese, shredded --
8 Ounces
1 1/2 c Milk
Salt -- to taste
Pepper -- to taste
Tomato sauce -- optional
Instructions:
* Use more or less of the meats, or omit if you prefer.
1. Have a large pot of water boiling. Slice top from peppers, remove seeds, and drop into boiling water. Boil 5 minutes, remove and invert to drain and cool. 2. Mix the beef, pork, onion, potatoes, Angostura bitters, cheese and milk together. Season with salt and pepper. 3. Stuff peppers with meat mixture. Place peppers in a shallow baking pan, add water until 1-inch deep. Bake in preheated 350-degree oven for 1 hour. Serve as is or with heated tomato sauce, especially sauce with herbs added.

NO not with mash it is too heavy and starchy for the pepper, try a goats cheese and ricotta mixture, chop some spring onions and mix goats cheese and ricotta together,stuff this mixture into romano peppers drizzle with a chilli olive oil and bake for fifteen minutes serve with rocket salad .

Yeah, that would work. Maybe add some chopped onions and sprinkle with grated American cheese.
Also try stuffed jalapenos. Cut off the stem end, scrape out the seeds and the veins. Mix cooked bacon (crumbled) with Philadelphia cheese and pack the jalapenos. Poke 3 holes in the bottom of each with a toothpick and bake / grill or 10 mins. Yummy and tangy, but not too spicy.

Yes it would, so long as you keep the mash "stiff", by making is fresh! If you make the instant stuff, it may go a bit sloppy!
We in England always make baked mash, either on a dish like Shepherd's Pie, or mixed with onions and topped with chedder for cheese and potato pie!
There are no rules in cooking, you can put together anything you like! as long as it tastes good to you!
Try putting some herbs into your mash, or maybe a few harricot beans, this will help it stay "stiff", and serve with a knob of butter on the mash, as this will not only taste good, but help soften it! =) have fun cooking! x

it would oviously work, it just wouldnt taste good, unless you want mashed potatoes inside of a pepper.
its not going to taste like any this special, it will taste exactly lime mashed potatoes and a baked pepper on the outisde, if this sounds good to you, go for it.

Would probably work but isn't that a little boring when you can fill it with so many other tasty things? I stuff with toasted pine nuts and sunflower seeds and then ratatouille with extra seasoning (garlic, salt, pepper and herbs) and top with mozzarella cheese and pop in the oven for 20-30 minutes - it's lovely!

Hi try stuffin it with savoury mince or sweetcorn and cheese.Delicious. I don't think mash potatoes will work, peppers need something spicy to compliment its flavour.

oh yah and with cheese on top! hmmmmmm, its making me hungry. . usually i use rice, but i have used mashed potatos, very very good
oh and i also like to mix stuff up in the potatos too, get creative :)
