Quiche? Add extra milk to make them fluffy as you beat them.

Artichoke, Green Chili and Cheese Quiche:

1/2 cup chopped artichokes (from can)
1 can diced green chili's
2 cups jack cheese, shredded
1 tsp hot sauce
1/2 tsp salt
1/4 tsp fresh ground pepper
1 deep dish pie crust
2 eggs mixed with 1 cup milk

Layer artichokes, chili's and cheese in pie crust. Mix hot sauce, salt, pepper, eggs and milk until frothy. Pour over cheese mixture. Bake at 425 for 5 minutes. Reduce heat to 375 and bake until set and crust is golden brown.
