marinate it in lemon juice, basil, oregano, finely chopped onions, finely chopped celery or celery seeds and olive oil, then grill or fry - making sure that all sides are sealed, basting with marinate at every chance. When cooked serve with boiled or steamed rice and some salad vegs

Why not make an Asian style BBQ Pork also
known as Char Sui Pork it's easy to make and
very tasty,you can serve it for lunch or dinner
and any left over pieces can be sliced up and
put in fried rice..simply marinade the Pork over
night in :-
*1tbsp of Red food colouring
*3tbsp of Hoisin Sce
*5tbsp of Dark or normal Soy Sce
*4tbsp of Honey
*2tbsp of 5 spice
*3tbsp of Rice wine vinegar or Brandy
*1tbsp of Sesame oil ( optional )
Marinade over night, Preheat oven to 200degress
Celsius.Place the fillet in the oven on a well oiled
baking tray and cook for 10minutes,remove from
oven and brush with the remaining marinade,place
back in the oven for another 10minutes..
Heat a pan with vegetable oil,remove fillet from
oven and brush with marinade and place in the fry
pan or BBQ and brown the meat until charred.
Slice up the Pork fillet and serve with Jasmine
rice,steamed Asian vegies like Bok choi,Wombok
cabbage and Choi sum..Yum..!!:)

I'd make a stuffing out of diced apples, bread cubes, cooked, crumbled bacon, and gorgonzola cheese. Make a pocket in your fillet and season with kosher salt and pepper. Place about 1 -2 tablespoons stuffing in each pocket, give or take a bit depending on how big each fillet is. Season outside of fillet with salt, pepper, and rubbed sage. Place in baking pan and oven roast for approximately 1 hour (depending on thickness). Add white wine to bottom of the pan if it gets dry.
When cooked thru, remove from baking pan. Deglaze pan with white wine and chicken stock, making sure you get the bits that are stuck to the bottom of the pan. Add 1 tsp dijon mustard and simmer until reduced. Season with salt and pepper. Serve with fresh asparagas, crisp-tender, and fingerling potatoes, steamed with kosher salt, butter and black pepper. Pour the sauce over potatoes and meat. Enjoy!

Emeril did one the other night on the Food Network called Pan-Roasted Lime Marinated Pork Tenderloin with Mango Salsa. I made it and it was awesome plus it was pretty quick and easy. You can get the recipe from www.foodnetwork.com
