Bartender is busy or MIA and the tap needs just a short reach-around. Could they lose their license, or will I just get a lecture on bar etiquette, or is it just fine as long as I pay for the drink minus the service? Either way doesn't matter, I don't go to bars. I'm just curious.

Bartenders and servers are the only persons allowed to serve alcoholic beverages. They and the bar owners are liable to prosecution and fines for violations. This is a DON'T in most bars. I have seen this happen in some neighborhood bars for regular customers, but is not the norm.

My ex's dad used to help himself all night long and pay for a pitcher or two at the end of the night. I guess it would all depend on if you knew the owner, if you worked there, if they never paid a bartender to be there and just expected to wait staff to get drinks...all of which met the criteria my ex's dad fell into.
In Canada you can't serve alcohol without Smart Serve Certification. So if someone is helping themselves and they got caught, they better have this certification or else they would be fined up to $5000.

As an ex bar owner I'd say no its illegal for a patron to do that. I wouldn't even let my regulars do it. I could get a fine or lose my license and the bartender on duty gets a fat fine

Aggreed on the last answer I knew a guy at this bar I use to go to that would let me put my glass under the draft and fill up without paying. I usually paid a ticket for a couple of regular price small beers.
