With a male Dane I would not neuter until between 9 months and 12 months.Geneticly they will be as big as they will be, however with a giant breed male it is a good idea to wait a little.
Neutering younger has absolutely nothing to do with liver or kidneys so whowever told you that didn't have a clue.

That isn't true, they will still get to be what their genes tell them to be. Sometimes neutering them young makes them slightly taller, long bones grow a little big longer... You can do it when he is 8 weeks or wait til he is 12, but you don't need to wait til he is over 6 mos old. Old wives tale that one is. SPCA etc are spaying and neutering pets all the time now at 6-8 weeks of age, before adopting them out, to ensure there are no more unwanted pets produced.

You can neuter a dog as soon as both testicles are descended, which will happen well before 6 months of age. After 6 months of age, you risk the dog becoming sexually mature and learning things like humping, marking, running off etc. Shelters neuter/spay as young as 8 weeks, the kidneys and liver can handle it, but the smaller the animal, the harder it is to keep them warm under anesthesia, so that's why most vets wait till 6 months-that's when animals are at their largest before sexual maturity. And early neutering won't stunt his growth at all.

6 months is the ideal time to spay or neuter an animal. It is true that it can be unsafe to neuter them before 6 months. Some vets will perform the sugery before 6 months, but it really is best to wait. And good job on choosing to neuter! So many people don't understand the overpopulation of pets. Good Luck with your new puppy!!
It is true that some shelters are choosing to spay and neuter at around 8 weeks. They Know that it is better to wait until they are 6 months, and that there are risks involved when performing surgery on such a young animal. But due to the over population they are choosing to get them fixed before they go to a new home, that way they KNOW that this dog won't be adding to the population. But your dog is already in a good home, and you Are going to get him neutered, So in my opinion, I think it is best to be safe and wait until he is 6 months old.

This is an issue with many differing opinions. There is an article on this page which discusses desexing and growth and other health considerations.

Its a pretty controversial topic, so i guess in the end you just have to make the decision that you feel is right for you. But that article is good and informative.
