Irish Scones

* 1 cup white flour
* 1/2 teaspoon baking powder
* 4 ounces butter, softened
* 1/4 cup granulated sugar
* 1 egg, slightly beaten
* 1/4 cup milk
* 1/4 to 1/2 cup currents or raisins, optional
* 1/4 cup coarsely chopped walnuts, optional

PREPARATION:
Mix flour and baking powder. Add butter, blending until mixture is smooth and well mixed. Add sugar and continue to mix well. Add half the beaten egg and all of the milk. Add currents, raisins and/or walnuts, if desired.Blend well to make a soft, somewhat sticky dough. Turn dough onto floured board and knead at least 5 minutes. Pat or roll dough into a circle about 3/4-inch thick. Cut dough into rounds and place on greased baking sheet. Brush tops of scones with remainding egg. Bake at 375° degrees for 15 to 20 minutes, or until browned.
Makes 6 scones.

The typical Irish meal to cook is Corned Beef and cabbage with potatoes and carrots. Irish soda bread goes great with the meal with some wine or dark beer. Epicurious.com has several different menus in case you want a formal Irish dinner or a casual one. Have fun cooking and enjoy!!!!

www.cooks.com has a ton of good recipes and an effective search box to help you find the ones you want quickly. Go there and look for recipes for corned beef, boiled cabbage, boiled red potatoes, and Irish soda bread. They'll have good recipes for these things. Except for the soda bread (bread raised with baking soda, not yeast) everything in a good St Pat's dinner is boiled. Season it well to make up for that. Serve mustard to go with the corned beef to be traditional.

Aside from the bread, if you're experienced in the kitchen, you might not even need recipes for the boiled items.

You can go the corned beef and cabbage route, but why not try something a little more Irish and less what Americans think the Irish eat.

One of my favorite chefs is Kevin Dundon. Kevin is the chef and proprietor of the Dunbrody Country House and Hotel in County Wexford, Ireland. His food is amazing. He has several restaurants including one at New York, New York in Las Vegas and Raglan Road at Downtown Disney in Orlando. (LOVE, LOVE LOVE it there!)

Mashed potatoes with chopped scallions and parsely

'corned beef and cabbage'--, corned beef, about 6 large white potates, 9 carrots, 2 onions, 1 head of cabbage
just boil the corned beef, directions on on the pkg. i throw out the first water after about 2 hrs. it is much too salty, then i replace the water and continue to boil it with the veg. [cut cabbage in half] all in the same pot as the beef, serve with mustard, [corned beef is salty so you don't need salt on the table, but mabey black pepper and butter for the veg.]
serves 5-6 people
