Many years ago I worked in a chicken & turkey factory,it was only a part time job while the children were in school.
I could not go in the slaughter bay as once the birds were hung and stunned the boys would pull the eggs out and throw them at one another. Some of the eggs were collected and we were allowed to have them free, they are much bigger than chicken eggs although the inner membrane is a lot tougher and they take a lot of cracking. My friend and I used to take some home and believe me they made lovely cakes, one turkey egg to three chicken eggs, quite a good ratio and much cheaper.
They are not sold and any not used were thrown.
We had to buy the chicken & duck eggs and any poultry we wanted on a Friday.
I would NOT work in a poultry factory again, although I was lucky,I was with the juggernauts and putting the pallets on the lorries so not with the live animals.

Turkeys don't lay that many eggs, and the ones they do lay are used to produce more turkeys. The average egg-laying chicken lays 300 or so eggs per year, while the average turkey produces only 100 to 120. Chickens mature and start laying eggs at 19 to 20 weeks of age, but turkeys don't get until 32 weeks. Turkeys are also much larger, averaging 16 to 17 pounds compared to 3.5 pounds for chickens. It would take more room for a bird that would take a lot longer to produce a lot fewer eggs. Turkeys are also more maternal/protective then chickens with their eggs.

yu can eat them, but they are a little stronger flavor than chicken eggs. also about twice as large as a large hens egg. Poults, young turkey chicks, can cost about 8 dollars a piece depending on breed. Royal Palm is one breed that is expensive.
