INGREDIENTS
2/3 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 eggs, beaten
2 cups milk
1/2 teaspoon vanilla extract
2 tablespoons butter, softened
2 bananas, peeled and sliced
1/2 (12 ounce) package vanilla wafer cookies
DIRECTIONS
In medium saucepan combine sugar, flour and salt. Add eggs and stir well. Stir in milk, and cook over low heat, stirring constantly. When mixture begins to thicken, remove from heat and continue to stir, cooling slightly. Stir in vanilla and butter until smooth.
In 9x13-inch dish, layer pudding with bananas and vanilla wafers. Chill at least one hour in refrigerator before serving.

This pudding would be a lot more yum yum, with out bananas, but here you-Banana Cream Pudding
This recipe is adapted from a vanilla pudding recipe found in Mark Bittman's tome How to Cook Everything. The pudding then is made bourgie by the addition of bananas and shaved coconut.

Serves 4-5

1/2 cup sugar
3 tablespoons corn starch
pinch salt
3 eggs
2 1/2 cups whole milk
2 tablespoons butter
1 vanilla bean, split and scraped clean of the seeds
1-2 ripe bananas
whipped cream
shaved coconut

In a saucepan, combine sugar, corn starch, and salt. In a separate bowl, mix the eggs, milk, and vanilla bean seeds (reserve the pod for another use), and add the milk mixture to the sugar mixture.

Over medium heat, with a wire whisk, whisk mixture well to eliminate any clumps. Stir constantly, while bringing the mixture to a boil, and thickening the pudding. This should take about 10 minutes. Stir in the butter.

Thinly slice the banana. Pour half of the pudding into individual cups. Place banana slices on top of the pudding, covering the surface. Pour the rest of the pudding on top, slowly as to not disturb the banana slices. Cover each cup with plastic wrap, putting the wrap directly on the pudding to avoid getting a skin. Refrigerate for a few hours.

Preheat oven to 300 degrees. Place untoasted, raw coconut on a baking sheet. Toast the coconut for approximately 7 minutes, until a golden brown color is achieved.

When ready to serve, whip cream stiffly, place a dollop of cream on unwrapped pudding, and sprinkle with shaved coconut. Enjoy!

Instant vanilla pudding

Make the pudding. Put a layer of cookies in the dish, then layer the pudding and the bananas, ending with pudding so the bananas stay moist. Put cookies around the edges of the dish as you layer. Top with cool whip. Put in the fridge for awhile. Simple and good.

Banana Pudding

1 cup Sugar
1/2 cup all-purpose flour

1 teaspoon vanilla extract
1 tablespoon butter (not margarine)
4 egg yolks (large eggs or better)
box of Vanilla wafers
4-5 ripe bananas
Meringue:

4 egg whites, at room temperature
5 tablespoons sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
Preheat oven to 375°F.

Baking Tip
The size and shape of the baking dish are important.
If you don't have a 9" x 9" baking dish, you really should. It's a handy size to have. You can get this baking dish from Amazon by clicking here. I've made this banana pudding in a round casserole dish, and it just doesn't turn out as well.

Line the bottom of a 9" x 9" baking dish with a layer of vanilla wafers. This recipe will not use the whole box, so you may snack, but don't get carried away.
Peel the bananas and slice into 3/8-inch rounds; use a ruler (I'm kidding). Cover the banana slices with plastic wrap to keep them from darkening and quickly make your pudding.

Combine the sugar, flour and salt in a bowl, and stir well to mix. Mash out any flour lumps with the back of your spoon. Set aside.

In a heavy saucepan, beat the egg yolks well (just use a fork or whisk, but beat them well). Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. [Note: If you're working with an electric cooktop, adjust the heat so that it's hot enough to boil, but not so hot that the pudding scorches.] Remove from heat.

Place a layer of banana slices in the baking dish on top of the vanilla wafers. Don't stint and put one slice of banana per wafer. Line those banana slices up edge-to-edge. Pour, spreading as necessary, half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.

Beat the egg whites at high speed until they form soft peaks. Add the cream of tartar. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish.

Bake in a preheated 375°F oven until meringue browns, 12 to 15 minutes, depending upon your oven.

This recipe makes 6 or 8 servings, and you can count on people asking for seconds. Any leftovers should be covered and refrigerated. And, yes, it's hard to cover anything with a meringue top and anyway, banana pudding is not as attractive after it has been refrigerated. But it's still just as delicious.

BANANA PUDDING

3 (3 3/4 oz.) pkgs. vanilla instant pudding mix
5 c. milk
1 (8 oz.) container sour cream
1 (9 oz.) carton whipped topping
4 bananas
1 box vanilla wafers

Mix pudding mix and milk. Then add sour cream and 1/2 of the whipped topping. In large casserole dish put a layer of wafers, bananas and pudding mix. Then repeat. Make 2 layers of each. Top with remaining whipped topping.
So good and so easy to make.

INGREDIENTS:

* 3/4 cup granulated sugar
* 1/4 teaspoon salt
* 1/2 cup all-purpose flour
* 3 cups milk, low fat or whole
* 3 large egg yolks
* 3 tablespoons butter, room temperature
* 2 teaspoons vanilla
* vanilla wafer cookies
* 3 to 4 bananas, ripe but firm
* sweetened whipped cream or whipped topping
* banana slices for garnish
* mint sprigs, optional

PREPARATION:
In a bowl, combine the sugar, salt, and flour; stir to blend. Slowly stir in milk until smooth. Pour into the top of a double boiler over simmering water. Cook, whisking frequently, until the mixture begins to thicken.

In a small bowl, whisk the egg yolks; gradually whisk in about 1 cup of the slightly thickened hot milk mixture.
Return egg mixture to the double boiler, stir in the vanilla and butter, and continue whisking and cooking until well thickened. Remove from heat and set aside to cool slightly.

In tall dessert glasses or a 2-quart serving dish, make a layer of vanilla wafers then sliced banana. Spoon some of the pudding over the banana layer then layer more vanilla wafers and banana slices, topping with more pudding. Serve with whipped cream topping. If using short dessert dishes, use only one layer each of the wafers, banana slices, and pudding, and then top with a dollop of whipped cream. Garnish each serving with a few slices of banana and a mint sprig if desired.
Serves 6 to 8.

This is not good, it's GREAT BANANA PUDDING
nilla wafers
1 can eagle brand milk
1 small box banana cream instant pudding
1 small tub cool whip
1 1/2 cup water
bananas

mix water,pudding & eagle brand milk. Put in fridge for 5 miinutes. Fold in cool whip'till blended. Layer with wafers, bananas, & pudding.

Banana Pudding

3 1/2 tablespoons all-purpose flour
1 1/3 cups sugar
1 dash salt
3 large eggs, separated
3 cups milk
1 teaspoon vanilla extract
1 (12 ounce) package vanilla wafers
6 medium ripe bananas
1/4 cup sugar
2 tablespoons sugar
1 teaspoon vanilla extract

Combine flour, 1 1/3 cups sugar and salt in a heavy sauce pan.
Beat egg yolks; combine egg yolks and milk, mixing well.
Stir into dry ingredients; cook over medium heat, stirring constantly, until smooth and thickened.
Remove from heat; stir in 1 teaspoon vanilla.
Layer one-third of wafers in a 3-qt baking dish.
Slice bananas, and layer over wafers.
Pour one-third of custard over bananas.
Repeat layers twice. Beat egg whites (at room temperature) until foamy.
Gradually add 1/4 cup plus 2 tablespoons of sugar, 1 tablespoon at a time, beating until stiff peaks form.
Add 1 teaspoon vanilla, and beat until blended.
Spread meringue over custard, sealing edges of dish.
Bake at 425° for 10-12 minutes or until golden brown.

Nabisco nilla wafers has the recipe on the inside of their box. My husband uses this every time he cooks, and everyone always raves about it! He made it for a lunch at work and didnt get any!
