for under the sea they could use fish shaped sponges and paint,
for USA flag, you can give them felt stripes and those foam sticker stars.
for umbrella, you could have them work together to decorate a giant umbrella and sing songs about the rain
print off a giant bubble letter U for each student. Let them glue or stick unicorns, unicycles, umbrellas, and underwear (this one might be iffy depending on the school)
do a baseball theme one day and use an umpire for something--this could be your coloring day
That'll take your five days! I used to teach preschool, so I know how this can be...U is a hard one!

Union Pacific Railroad--dress up like engineers and play train songs, with wooden train whistles, percussion instruments for rythmic train sounds of an engine.
University Day---have children wear t-shirts from favorite colleges. Also, talk about higher edUcation.

You could have pre-cut U's and some sort of stick (a popsicle stick, maybe?) and have them decorate the U with bingo markers or paint.
Attach the stick to the upside down U and you have an umbrella!

Show them a picture of a horseshoe in a position that looks like a letter U. Give them a cardboard shaped liked a horseshoe and have them design it.
