filet mignon on top of macadamia nut and basil puree with a french vinaigrette and some veggies? Thanks

well, im listening to the tips about substituting chicken for the filet mignon. I thought my puree idea was good but now after hearing people idk

Excellent choice of ingredients.

Nevertheless, I suggest use only a bit of nut, in order to give crunchiness to the pure, but not have an invasive element, because consumers usually prefer slight variations of the traditional dishes.

Never foget to use fresh basil.

I like the macadamia, basil idea - but I am not sure I would want filed Mignon this way - I almost see this as more of a chicken preparation than one for a great cut of beef

I would say way too many strong flavors there. not a huge fan of the basil, but go with low key flavors to let the filet's flavor shine- that is of course what the customer is paying for.

I get a mental image with puree that turns me off although the concept sounds good. Do you have an alternative for the puree concept, maybe more salady?

the combo sounds good, but beef has a strong flavor that needs a strong sauce. i think it would be better with pork or chicken. both have a milder flavor meat.
