you should test freeze a small amount before freezing the whole thing.

I suppose you could freeze it for a short period of time, a week at most, but any longer than that and crystals will start to form in the whey and the texture will never be the same. I would advise against freezing it, unless youre attempting to make some sort of cottage cheese iced cream or something.

Yes, if you go to the Mississippi State Fair, they have Frozen Cottage Cheese on a Stick, and Deep-Fried Frozen Cottage Cheese on a Stick.
They're called Cheesicles.

When you freeze it the consistency will change. It seperates adn doesn't mix back together well. Since it doesnt mix back together well, it doesn't taste the same. Plus it get a weird texture - kind of rubbery.

Mix it with eggs and sugar and yogourt, bake it and then freeze it - yeah - frozen cheese cake - yummiiiiii
