I love to chop a little white onion, use raspberry vinagrette dressing and some bacon bits in a quick fresh green bean stir fry.

I always cook them using my great grandmother's method. Use about 2 lb. beans, washed and ends snapped off. Put them in a bot with enough cold water to cover them by about an inch or so. Add one quartered onion and a slice or two of salt pork (rinsed thoroughly). Bring to a boil, reduce heat, cover, and simmer until they're the doneness you prefer. I like mine sorta mushy (from the south, and everyone knows we don't like crunchy vegetables, lol), so I usually simmer them for about 45 minutes.

Drain with a slotted spoon and eat!
