would it be good for thoes who are waitresses, dish washers, factories works and so on, to have tax breaks, beacuse they have jobs that may be considerd "undesirable" by most?

It would be kind of hard to draw the line on what jobs should get special breaks. There are a lot of jobs that somebody, and often many somebodies, would consider undesirable. And some waitresses and factory workers make a very good income - some don't, of course.

There are already a good many tax breaks given to low-income workers, which seems fair.

Many folks in lower paying jobs may qualify for the Earned Income Tax Credit.
