People put all kinds of fancy cocktails in a martini glass and call them "martinis," but they're not really martinis at all.

A real, authentic martini has only two ingredients: gin or vodka and vermouth. The basic martini is made with gin, but some people prefer the vodka martini. The recipe is simple: 2 and 1/2 ounces of gin or vodka, and 1/2 ounce or less of dry vermouth.

The real keys to making an excellent martini are speed and temperature. You must chill the cocktail glass by filling it with ice before you start. Then you fill a cocktail shaker with ice. Add the liquids, shake or stir, and strain the cocktail into the glass (of course remove the ice from the glass first). Don't shake or stir for too long or you will water down the drink. But be generous with the ice because you want it COLD. If you can, chill the gin/vodka beforehand.

Lastly, you garnish the martini. The traditional garnish is a lemon twist, but the olive has become more popular these days.

If you want to do something different, add a small splash of olive juice to the recipe. This is called a "dirty martini" and it's a nice way to add a little flair.

Real martinis use gin, but that doesn't diminish the popularity of Vodka martinis. And if you change the olive to a pearl onion, it magically changes to a Gibson, lol. But a lemon twist is still acceptable for Martinis.

But how to make a martini? That's hard, because there are literally thousands of variations. But purists will tell you that a martini is a mixture of gin and dry vermouth in a ratio somewhere between 2:1 and 15:1 that is shaken liberally over ice (shake too much and it's just gin flavored ice water though), strained into it's proper glass, and served with an appropriate garnish. Use high quality ingrediants, because there is nothing in this drink to cover cheapness. Dry London gin, and dry white Vermouth are the lifeblood.

For the traditional martini, you just have to find what you like as a ratio. (And don't make one for the first time with a room full of people. Martinis take a little bit of practice.)

Here are a few recipes for the non-tradional martinis:

The Chocolate Martini:
2 ounces vodka (6 cl, 1/2 gills)
1 1/2 ounces white crème de Cacao (4.5 cl, 3/8 gills)
1 Hershey’s Hug, for garnish (1/2 oz, 1.5 cl, 1/8 gills)
Stir and strain into a chilled, cocoa-rimmed cocktail glass. Add the garnish.

Vodka Martini:
Stir in mixing glass with ice & strain
2 oz vodka (6 cl, 1/2 gills)
1/2 oz dry vermouth (1.5 cl, 1/8 gills)
Add olive or lemon twist
Serve in a cocktail glass (4.5 oz)

Vesper Martini:
Shake in iced cocktail shaker & strain
3 oz gin (9 cl, 3/4 gills)
1 oz vodka (3 cl, 1/4 gills)
1/2 oz Lillet Blanc (1.5 cl, 1/8 gills)
Add lemon twist
Serve in a cocktail glass (4.5 oz)

Italian Martini:
tir in mixing glass with ice & strain
2 1/4 oz gin (6.5 cl, 9/16 gills)
1/4 oz amaretto (6 dashes, 1/16 gills)
Serve in a cocktail glass (4.5 oz)

Do you want a simple martini? Then it's vermouth and gin or vodka. Don't shake unless there is juice in it, stir instead. Something I like doing is use flavored vodka. It gives a little bit of a twist without losing the authentic texture of a martini.

There are plenty of recipes online. I like the ones using Bailey's (any flavor). I really don't know what sort of recipe you're looking for and I could list many.

There are a million ways to make a martini, although the traditional "real" martini is just gin and an olive, if you're a purist.

go to www.webtender.com, they have a ton of martini recipes
