According to the Anthropology and Environmental Psychology classes that I have taken, the reason why native people or people of the past appear fit is due to seasons of scarcity.

For example, the Pima Indian tribe lived in an environment (the Southwest) where food was often scarce. Their bodies adapted to absorb as many nutrients as possible from the small amount of foods that they could find. As a result of the Westernization of their culture, food has become more accessible. There is currently a 50% rate of diabetes, as well as a high percentage of overweight people of Pima origin.

In the past, being overweight often was a sign of prestige and wealth because logically it was. Most people were skinny because they were impoverished and didn't have the luxury to eat regularly.

The answer is as simple, as it is serious. Most ancient tribes just didn't have enough to eat.
