cook her dinner! its romantic and it shows that you care about her. plan an evening for the two of you to just chill out together with a nice dinner and dessert for two. after watch a movie most likely a comedy with her so there isnt TOO much pressure on you to make her laugh and smile, but you still have to put in your own fair share of flattery and fun

Be there for her. Girls love it when guys will sit there and listen, as much as guys often don't want to do that.
Cuddle with her..put your arm around her..let her lean on your shoulder and just feel at peace with the world. Don't pressure her into doing anything she doesn't want to do.
Watch a movie on the couch together. You can just lay around and talk. Perhaps take a stroll outside. Watch the stars..

One time my step dad cut out a bunch of hearts and wrote I Love You on them and left them all over my mom's chair. I always thought that was romantic, you could try that.
