This one is pretty good, and its simple.
* 6 slices day-old bread
* 2 tablespoons butter, melted
* 1/2 cup raisins (optional)
* 4 eggs, beaten
* 2 cups milk
* 3/4 cup white sugar
* 1 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Mmmmmmmmmmmm. Savory bread pudding. Some of the posters obviously missed that part of the description - tho their traditional raisin and rum versions sound fine.
Sausage and Sage Bread Pudding:
2Lbs loose savory sage/sweet Italian sausage, browned and drained
1 lg onion, chopped
2 stalks celery, halved and chopped
1-2 loaves hearty bread (try semolina, baguettes, italian with seasonings - nothing pasty and white) Diced (1.5" cubes - rough - leave crusts on)
4 eggs
3/4 C cream
Butter for pan
Salt and pepper to taste
3T sage, chopped (fresh)
4T parsley, chopped
Brown sausage and remove to a bowl. Hold. Saute onion and celery in 2T of the remaining fat. Butter a dish. Beat eggs and cream together. Preheat oven to 375. When veggies are translucent but not totally cooked, mix with bread and sausage. Toss well to incorporate flavors. Season with salt and pepper and add sage. Pour into buttered baking dish and cover with egg mixture. Let stand for 5 minutes. Toss. If too dry, pour a bit more cream over and bake, covered, for 35 - 45 minutes. Uncover for the last 10 minutes of baking (more if a crust is desired). Top with chopped parsley.
Variations: smoked turkey (diced from deli) and sage. Saute veggies in butter.

Custard Bread Pudding
6 eggs
4 cups milk
1 cup sugar
4 - 5 slices bread
1 teaspoon vanilla
1/4 cup Grand Marnier or Amaretto
dash of cinnamon
Beat everything except the bread in a blender ingredients should come almost to the top if not add milk. Whip until frothy poor into a deep Pyrex dish preferably oval soak bread and let rise to the top, sprinkle cinnamon and place in a larger pan with water at least 1-1.5 inches high. Bake at 360 for 1 hour. Light and very tasty.

Meatball Bread Pudding: What's not to love?
INGREDIENTS
8 ounces ground beef
3/4 cup chopped onion
1 clove garlic, crushed
1/4 cup red wine
1 (14.5 ounce) can diced tomatoes, drained
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1 teaspoon sea salt
3 eggs
1 tablespoon brown sugar
1/3 cup half-and-half cream
8 slices day-old bread, cubed
1/2 cup low-sodium chicken broth
1/4 cup grated Romano cheese
DIRECTIONS
Crumble the ground beef into a large skillet over medium heat. Add onions and garlic; cook and stir until evenly browned. Drain off excess fat. Stir in the red wine, tomatoes, oregano, red pepper flakes and sea salt. Bring to a boil, then reduce heat to low, and simmer for 20 minutes.
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, whisk together the eggs, brown sugar and half-and-half. Place the bread cubes in a 2 quart casserole dish, or square baking pan. Pour in the egg mixture, and chicken stock, and stir in the ground beef mixture. The bread should be saturated. Sprinkle half of the Romano cheese over the top.
Bake for 40 minutes in the preheated oven, until the top is golden and the center is set. Portion into individual bowls, and top each one with some of the remaining Romano cheese.

Savory Rosemary Bread Pudding
2 tablespoons olive oil
1 medium onion, chopped
4 cups cubed bread
2 tablespoons minced fresh rosemary
1 cup shredded or crumbled cheese
6 eggs, lightly beaten
1 cup heavy cream
1 cup 2% milk
1 pinch salt and pepper to taste
Oven at 375. Heat olive oil in a cast iron pan, cook onion and rosemary in oil until is soft. Toss bread cubes with olive oil and onions. Exact measurement of bread is not necessary. Place in a well oiled, deep sided, 9 inch square pan. Toss with 1/2 cheese, and sprinkle remaining cheese over the top. Beat together milk, cream, and eggs. Pour over bread in a pan. It is fine that the bread sticks out of the custard. Bake for one hour or until browned and a knife inserted in the middle comes out clean (except for melted cheese). Serves 8.
