Chocolate Spice Cake
3/4 c Sugar
3 tb Shortening
1/2 ts Lemon extract; if desired
1/2 ts Vanilla
2 Eggs
1 c Flour
2 tb Unsweetened cocoa
1/2 ts Baking powder
1/2 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Baking soda
1/4 ts Salt
2 tb Chopped nuts
1/3 c Buttermilk*
2 ts Powdered sugar
*To substitute for buttermilk, use 1 teaspoon
vinegar or lemon juice plus milk to make 1/3 cup.
Heat oven to 350°. Spray 9" round cake pan with
nonstick cooking spray; dust lightly with flour.
In large bowl, beat sugar and shortening until
well mixed. Add lemon extract, vanilla and eggs;
beat 2 minutes at medium speed. Lightly spoon
flour into measuring cup; level off. Add flour and
remaining ingredients except powdered sugar. Beat
at low speed until moistened; beat 2 minutes at
medium speed. Pour into sprayed and floured pan.
Bake 20-30 minutes until toothpick tests clean.
Cool 10 minutes on wire rack. Using small
strainer, sprinkle top of cake with powdered
sugar. Cool completely before serving.
Applesauce Spice Cake
1/2 cup (1 stick) unsalted butter, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup sugar
3 large eggs
1/2 teaspoon vanilla
1 cup applesauce
1/4 cup plain yogurt diluted a bit with milk, or 1/4 cup of buttermilk
1/2 cup of chopped walnuts
1/2 cup raisins
1 Preheat oven to 375°F. Butter and flour an 8-in square baking pan, set aside.
2 Sift together the flour, baking soda, cinnamon, allspice, nutmeg, cloves, and salt. Set aside.
3 In an electric mixer, beat butter until light, add sugar and beat until fluffy. Add the eggs, one at a time, beating to incorporate after each addition. Add the vanilla and the applesauce and beat until smooth.
4 Mix in half of the dry ingredients. Just before they are blended, add the thinned yogurt (or buttermilk). Then mix in the rest of the dry ingredients, until completely incorporated. Do not over-mix.
5 Pour out the batter into your prepared cake pan. Place in the middle rack of the 375°F oven and bake for 25-30 minutes, until done. The cake should spring back to the touch, and a toothpick or thin skewer should come out clean after being inserted in various spots in the middle of the cake. Remove the cake from the oven. Let cool for 15 minutes. Then invert to cool completely on a rack.
Buttermilk Maple Spice Cake
INGREDIENTS
1 cup unbleached or all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Pinch of cayenne
2 eggs, lightly beaten
2/3 cup buttermilk
1/2 cup pure maple syrup
1/3 cup vegetable oil
1 tablespoon blackstrap molasses
1. Preheat oven to 350 degrees. Grease a 9-inch square baking pan.

INGREDIENTS
* 2 1/2 cups bleached all-purpose flour
* 1/4 cup cornstarch
* 4 teaspoons baking powder
* 1/2 teaspoon salt
* 2 teaspoons ground ginger
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground allspice
* 1/2 teaspoon ground cloves
* 1 cup milk
* 3 large eggs
* 2 teaspoons vanilla extract
* 1 cup unsalted butter, softened until easily spreadable
* 2 cups dark brown sugar
DIRECTIONS
1. Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
2. Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
3. Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.
Picnic tip
Can be double-wrapped in plastic a day ahead. Return to pan to transport. Also, the batter can be divided and baked in two 8-inch square cake pans. Take one on the picnic; freeze one for later.
Pumpkin Spice Cake
INGREDIENTS
* 2 cups white sugar
* 1 1/4 cups vegetable oil
* 1 teaspoon vanilla extract
* 2 cups canned pumpkin
* 4 eggs
* 2 cups all-purpose flour
* 3 teaspoons baking powder
* 2 teaspoons baking soda
* 1/4 teaspoon salt
* 2 teaspoons ground cinnamon
* 1 cup chopped walnuts (optional)
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12x18 inch pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
2. In a large bowl combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared 12x18 inch pan.

Grenadian Spice Cake
INGREDIENTS
* 2 cups sifted all-purpose flour
* 1/2 teaspoon baking powder
* 1/8 teaspoon salt
* 1 1/2 cups white sugar
* 1 cup unsalted butter - chilled, cut into tablespoon-size pieces
* 1 1/2 teaspoons grated lime zest
* 1 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground allspice
* 3 eggs
* 1/2 cup milk
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan. Sift together the flour, baking powder and salt, set aside.
2. In a medium bowl, cream together the sugar and butter. Beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice. Add the dry ingredients alternately with the milk, stirring after each addition. Pour batter into the prepared pan.
3. Bake for 75 to 90 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool in the pan for 10 minutes before turning out onto a rack to cool completely.
Spicy Apple Spice Cake
INGREDIENTS
* 1/2 cup shortening
* 1 cup brown sugar
* 1/4 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 cup milk
* 2 cups apple - peeled, cored, and chopped
* 1/4 cup shortening
* 2 cups sifted confectioners' sugar
* 1/4 teaspoon ground cinnamon
* 1 pinch ground nutmeg
* 1/4 cup evaporated milk
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
2. In a large bowl, cream together the shortening, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the chopped apples.
3. Spread batter evenly in prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
4. To make the frosting: In a medium bowl, combine 1/4 cup shortening, confectioners' sugar, cinnamon and nutmeg. Beat until light and creamy. Beat in the milk, one tablespoon at a time, until desired spreading consistency is achieved. Spread over top of cooled cake.

i made this for my husbands birthday cake and he LOVED it... but i didnt add the cloves because i didnt think i would like them in something other than turkey... this exact recpie is also in The New Cook Book! =] enjoy

Apple Spice Cake
3 eggs
1 1/2 cups sugar, white
3 cups unbleached flour, white
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
1/2 cup orange juice, frozen concentrate, thawed
1/2 cup vegetable oil
1 tsp vanilla extract
3 cups chopped apples, Granny Smith or Yellow Delicious, peeled
Preheat oven to 350°F Beat eggs in a large bowl with an electric mixer until frothy. Add sugar and beat well. In a small bowl, mix dry ingredients together flour, baking powder, baking soda, cinnamon, nutmeg, allspice and salt. Add dry ingredients to egg mixture; blend well. Add in orange juice concentrate, oil and vanilla, mix together. Batter will be thick. Fold apples into batter until blended. Pour into prepared bundt pan.Bake for one hour or until a wooden toothpick inserted into the cake’s center comes out clean.

2. Combine flour, oats, baking soda, baking powder and salt in a medium size bowl.
3. In a large bowl, cream the butter or margarine. Add brown sugar, sugar, allspice and nutmeg; beat until light and fluffy. Mix in eggs and vanilla extract.
