You don't lose anything besides taste. (I honestly can't notice any difference when I have skimmed milk).
Just something I found while doing a quick search:
"For children aged 1-2 years, whole milk (4% fat) is recommended. The fat content of dairy products is a concern for adults and children over the age of 2. You can easily reduce the fat content while maintaining the calcium content by selecting low-fat (2% or 1%) or skim milk and other diary products.
The calcium is not contained in the "fat portion" of milk, so removing the fat will not affect the calcium content. In fact, when you replace the fat portion that has been removed with an equal part of skimmed milk, you are actually increasing the calcium content. Therefore, one cup of skim or non-fat milk will have more calcium than one cup of whole milk because almost the entire cup of skim milk is the made up of the calcium-containing portion! "

Actually, skimmed milk can be better for you than whole milk.
Obviously fat content is decreased, which can only be a good thing.
Calcium is contained in the non-cream portion of milk and so when milk is skimmed all the calcium remains. In fact, pint for pint, skimmed and semi-skimmed contain slightly more than whole.

Nothing!!! Except the Fat. Don't give semi or Skimmed to Children under 5 as they need that fat for healthy growth. But theres no Different in Goodness.

You are likely to remain as good after drinking a glass of skimmed milk as you were before drinking it.
The same is not true of a catholic schoolgirl drinking a glass of vodka at an isolated army barracks billeted by sex-starved soldiers.

the fat..... you'll get used to it, the difference in taste is not much. As a matter of fact, you'll be able to tell the difference after awhile. Going to restaurants, you can taste the fat in milk, yuuuuck!
