You cant. At best, you can use text editing software that allows images. Try word pad.

there is no official way to extract the text from a JPG image although something that you can try is what is called an Optical Character Recognition or OCR program I am going to list a few for you here, but most of these usually ask that you use a scanner but this is the best that you are going to be able to find if you are looking for something to pull the text out of an image

Simple OCR seems like the type of program that you are looking for though as it will pull as much infomation from a document image as good as some of the more expensive versions of the software

You can't convert an image into text and have it make sense. But, if for some reason you want to, just open the JPG file in Notepad and then save it as a TXT file.

You can use an OCR(Optical Character Recognition) program. There area few free ones. and some of the commercial one are pretty good. If you use linux there are several that are free.

However, the resulting text will need a LOT of editing.
