I really want my mom to stop smoking.
She is 41 and she's been smoking since she was 15.
My sister is 18 now but my mom had to get a C-section with her and they had to keep increasing my mom oxygen because her lungs were bad, imagine how they are now.
Cancer doesnt run in our family.
But, I know it can happen.
My mom says that when she smokes it craves her appetite. And I think shes afraid that if she stops smoking she will gain weight. Shes very toned but she is 180 pounds.
I know how much my mom stresses, at one time she was down to a size 0 in her 20's.
She has been 180 for about 6 years now and she looks good, its not flabby or anything.
What can I do?

You can't do nothing.
If your mother doesn't want to stop she won't, or only for a couple of days, then she will start again first secretly later openly and after some weeks she'll be back.

And yes, your mother will gain weight, but how much and for how long depends on you mother.

She might have to join a gym and stick with a special diet for a while to prevent weight gain.

So you can do nothing to make her stop smoking, but if your mother decides to stop, then you can do a lot, you can go on walks with her, join a gym with her, cook together with her healthy meals, don't sit in front of the TV munching, etc.

Good luck
