It does. It takes a long time. Well not so long if you keep it out in the warmth...
But that is because of the preservatives in it they help keep it good for a long time. Same with many other condiments.
However honey is the only food that never goes bad

Eventually the oils in Mayo will go bad, but it takes a long time. Mayo has a load of artificial preservatives in it, as you can read on the label.

It does go bad if you don't refrigerate it promptly and use it by the expiration date.

check the expiry date that's usually the day it will go bad
