Processed foods are definately different than the homemade counterparts.
Why? Shelf-life.
Homemade foods are meant to be consumed within a few days. The packaged foods are supposed to be able to sit for months before eaten. As a result, the formula needs to be changed to become "shelf stable". Usually moisture is the problem, so I'm sure it's firmer because it's less water content than homemade jello.

gelatin is made from the skins, ligaments, tendons, and hooves of slaughtered farm animals. The commercial stuff is much more concentrated than what can be packaged as a powder. Most commercial preparations use gelatin leaves, which are much thicker and gummier than the powdered stuff, which is why the commercial stuff is more firm

Like so many other foods (ie cookies) its made differently, store jello doesn't melt either if you leave it out whereas homemade jello.

yeh i used to have this problem but i soon found out if i used less water than they tell you,problem solved.....firm jelly.

put less water in it at home and let it chill longer.
