Bisque is a type of rich, thick, creamy soup which has been pureed so that it has an even texture. Traditionally, bisque includes seafood, wine or cognac, and cream, along with a mixture of spices. Bisque is related to consomme, which is another rich soup produced through a long cooking process that concentrates flavors for intensity. As the name suggests, bisque has its origins in France, although the dish is prepared all over the world with a wide variety of ingredients.

Bisque is a seafood flavored soup often finished with heavy cream and a splash of sherry. The term bisque refer es to the technique used to make the soup. As with all soups the main or prime cut or piece of any meat, protein, seafood or veg table should never be used. Lobster shells are used in the making of the most traditional bisque, although crab and shrimp shells are often used with the lobster shells or on their own. The key to the rich flavor in a bisque is after you saute your veg tables, you add the shells, at very high heat add brandy and flambe, after the alchol has burned down cover with a heavy layer of tomato paste and roast shells and paste in the oven until caramelized. Then add fish stock or water and simmer. This mixture is then pureed WITH the shells, This will release all the flavor needed to make this soup great. Strain the soup through a FINE strainer. finish with salt and white pepper to taste, cream and a splash of sherry. In fine dining a bowl with lobster meat is presented to the guest and the bisque is ladled over it. At home just savor the fruits of your labor. Bisque refers to the flambe and canalization of the shells with tomato paste. In modern menus you may see potato bisque etc. this is a misuse of the word.
