Use case law. Look up "Vancouver Sextuplets" - JW couple bent out of shape over blood transfusions for premature neonates. The government had to take custody of the babies to get the transfusions done; these parents would have let them die. Two of them did die. They will allow a child to die before allowing a blood transfusion. That's important.
Also, they don't celebrate birthdays. There's other stuff, look that up, don't worry about the publications so much, focus on how the restrictions affect interaction with peers, etc.
Non-religious kids are just as moral, if not more so, than their religious counterparts. Don't let anyone tell you any different.

Any articles on the blood doctrine, because they WILL let their child die before taking blood
There have been many cort cases where children have had to be taken away
There is one ongoing now where the Watchtower Society told the mother of Bethany Hughes that arsenic and orange juice would help her daughter with cancer instead of blood transfusions.
