Lemon meringue pie for dessert, that's a must!
Coronation chicken?
Prawns with good old fashioned shredded iceburg lettuce and marie-rose sauce.
All simple and satisfying.
Well done on spoiling your mum.
You can come round and do my lunch too! :)

the prawns are a nice starter. How about a light chicken salad or pasta with chicken and a light garlic sauce for the main course. If you really are skilled in the kitchen, why not a creme brulee for dessert (pudding). Or maybe a simple pound cake w/fruit topping?

Shrimp remoulade

Then just to simplify things.. Just bake the chicken with a rice stuffing
Side dish of some good steamed veggies (broccoli, carrot, cauliflower

For dessert: I make a fruit salad consisting of mandarin orange slices, sliced banana, chopped apple, kiwi and/or strawberries) mix that up with a cup of strawberry yogurt. Very light dessert

Why does it have to be different? If your Mom is like my Mom she'd love to have old fashioned fried chicken, mashed potatoes and corn on the cob. Then serve apple pie for dessert.
