i am looking for some fairly easy jam recipies, i have never made jam before so i would like to try out just some basic recipies? ta

Start with strawberry jam.
Makes: 4.5kg (10lb)

2.7kg (6lb) Strawberries
2.7kg (6lb) Sugar
2 Lemons

Wash and hull the strawberries, drying thoroughly.
Place the strawberries into a heavy bottomed saucepan with the juice of the two lemons.
Preheat oven to 110°C: 225°F: Gas ¼.
Place the sugar in an ovenproof bowl and put it in the centre of the oven for 10 - 15 minutes.
Cook the strawberries over a low heat for about 15 minutes, until tender and the juices are running.
Remove the pan from the heat and stir in the sugar, until fully dissolved.
Bring to the boil and cook rapidly for 10 - 15 minutes until the setting point is reached.
Skim the surface if necessary and pot.

I made some orange curd at the week-end. It was lovely and very easy too. It may be a starter for you to try before making jam.
8ozcastor sugar
juice half lemon
juice and rind three large oranges
4oz butter
1 egg yolk
put all ingredients in a bowl over a pan of simmering water. Stir until all sugar dissolved and leave for 20 mins or until thickened. Leave to cool and then place in a jar.
This is really lovely spooned (about 2 teaspoons) over Chantenay carrots or on toast or as a sauce for ice-cream or whatever takes your fancy.

Homemade Strawberry Jam
Ingredients:

1 quart ripe mashed strawberries
4 cups sugar, (do not reduce the sugar)
3/4 cup water
1 box fruit pectin, available at your grocers
Plastic storage containers



Instructions:

Measure 2 cups mashed strawberries into a large bowl. Stir in sugar and let stand for 10 minutes.

In a small saucepan, bring water and pectin to a boil, stirring constantly. Let the mixture boil for one minute while continuing to stir.

Combine fruit mixture with pectin mixture. Stir until all sugar is dissolved (about 3 minutes). Add the remaining strawberries to this mixture.

Fill the plastic containers to within 1/2 inch from the top. Cover with lids and let stand at room temperature for 24 hours.

Refrigerate up to 3 weeks. This jam can be frozen for up to one year.

Freezer jam is very easy to make and very tasty.Because you use fresh fruit to make it ,it tastes like fresh when you eat it.
Use a product called "Cirto" to make.It comes in powder type or liquid form.'Just follow the very simple to read directions and you can't fail.
Just a matter of using fruit,sugar and lemon juice.
Keeps in the freezer for a long time.
"Cirto" is a fruit pectin product.

My basic recipe is the same as the others, however if you ever use the rind of oranges/lemons make sure they are unwaxed, wax is not good for you.
